I hope that you can give me some pointers on how to gain weight without piling on the cholesterol.
I am 72, male, 5'7" tall and weighs 103 lbs.
I understand that I should be about 118 lbs.
The websites I visited advocates peanut butter, eggs with yolks, red meat etc.
However, these are high in cholesterol.

Hi Winston, do you suffer from Dyslipidemia at the moment? Do you have a high coronary risk profile. Have you had ischemic heart disease? If you have no history of CAD, and have a low coronary risk profile, then throw caution to the wind and eat as you wish. If you feel guilty, check your lipid profile 6 monthly.
